NUTCRACKER WEEKEND

Been a busy mama the last few months....Nutcracker consumes all of my fall months each weekend and in December the first two weeks it is crazy with rehearsals and getting reading for the curtain to be drawn. It has been an amazing weekend and one tired mama!

Happy Labor Day

 
 
 
 
I'm back....been traveling so much with work and never having anytime anymore. I changed jobs and went to work for the state as a Foster Care Placement Manager. I am loving my new job. 
 
Grabbed it off of Pinterst and thought I would share.

Will's Crockpot Sugared Pecans or Walnuts

 
An easy Fall recipe for snack or to take to a party....
 
Spiced pecans or walnuts, from the slow cooker. Sugared pecan recipe with cinnamon and spices, or use walnuts.

Ingredients:

  • 16 ounces pecans or walnut halves
  • 1/2 cup melted unsalted butter
  • 1/2 cup powdered sugar
  • 1/4 teaspoon ground cloves
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger

Preparation:

Turn slow cooker to HIGH about 15 minutes in advance. In hot slow cooker, stir together the nuts and butter. Add the powdered sugar, stirring to blend and coat evenly. Cover and cook on HIGH for 15 minutes. Reduce the heat to LOW and remove lid; cook, uncovered, stirring occasionally, for about 2 to 3 hours, or until the nuts are coated with a crisp glaze.
Transfer the nuts to a bowl.
In another small bowl, combine the spices; sift over the nuts, stirring to coat evenly.
Let cool before serving.
 
 
 
I have a bunch in my freezer so this is what I am going to do tomorrow since it will be a raining holiday in the south. Enjoy!

SUMMER FUN

My son has enjoyed lots of pool time with friends since being out of school. He just registered for freshman fall classes which will start in a few weeks....mine is the one on top.



also my oldest granddaughter has been having some fun this summer also. I don't see how they can play ball in the deep south with the conditions we have been having. This was a few weeks ago when they won the State Recreation Department for 10yr old. They have been going each year and they keep bringing home the title...so proud of my Hailey! She is an awesome player and will start middle school this fall. I am sure this gimmie will be seating out in the stands at the school watching her excel in her favorite game. She is also on a traveling team and they are up in ATL this weekend playing. I sat out of this one cause the heat index was to high for this ole woman. lol











Enjoy the rest of your weekend and try to stay cool. I know from what I have been reading the Midwest folks are not so use to these temps.

FREEBIES AND DEALS

 recently we went to the mountains to pick up this camper from my parents house.....my dad has had it in the backyard sitting for years and not even using it...he gets those urges where he will buy something and think he will use it but mama says her camping days are over....it's hotel days now so after sitting for so long I brought it home....just has to be fixed up a bit....and it was FREE...not a bad deal.

started a new job so have not been on the computer much lately and the snake on the last post was in vidalia, ga...it was a friend of mine who sent me the picture because it was their friend...so not much details about it but the location...looks like a rattlesnake and someone shot it....it can stay over in that county anyway

Aunt Peggy's Meatloaf

 

Came home tonight and was wanting something quick and fast to eat. I had some veggies I cooked over the weekend so all I needed was a meat. So I tried Aunt Peggy's Meatloaf. Got it off the Food Network site. It is Paula Deans Aunt Peggy's recipe. I omitted a few items but it still was great.

 It's a keeper!

 

Ingredients

  • 1 pound lean ground beef
  • 1 (6-ounce) can tomato paste
  • 1/2 cup chopped Vidalia onion
  • 1/2 cup quick-cooking oats
  • 1 egg, lightly beaten
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup ketchup
  • 2 tablespoons packed light brown sugar

Directions

Preheat the oven to 375 degrees F.
In a large bowl, combine the ground beef, tomato paste, onions, oats, egg, salt, and pepper.
Shape the mixture into a loaf and place it in a 9 by 5-inch loaf pan.
In a small bowl, whisk together the ketchup and brown sugar.
 Slather the glaze on top of the meat loaf and bake until the meat loaf is firm and cooked all the way through, about 1 hour.
 Serve hot.

I left out the bell pepper and mustard in the sauce over the top. I will probably add it next time since I didn't have any on hand tonight.

Me and I know you all do to...well after reading this post back at the first of the year, I was so excited cause I knew I would score some free magazines and would not have to pay a dime for them. Oh I love those 5 buck subscriptions that you see here and there but 0 sounds so much nicer.


This is what I have scored so far in the last couple of months with my coke rewards....








Luckily my Country Living ran out this month and today I got it again for the year free!
